Spring Onion and Chive Pizza with Prosciutto
Ingredients for Pizza:
- 1 ball premade pizza dough or make scratch dough, recipe below
- flour, for work surface
- olive oil
- 1/2 lemon, zest and juice
- 1 cup of parmesan, divided
- 2 cloves garlic, minced
- 1 bunch fresh chives with flowers or buds
- 3 spring onions or scallions
- 6 thin slices prosciutto
- freshly ground black pepper
- heavy cream, optional
Ingredients for Dough:
- 1⅓ cups all flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup fat-free milk
- 2 tablespoons olive oil
Preheat your oven to 400°F. Place a pizza stone or baking sheet in the oven.
If making scratch dough, combine ingredients until mixed well and let rest.
Lightly flour your surface and a rolling pin, then roll pizza dough into a 8-inch circle using your hands. Let rest.
Place the chives and spring onions in separate bowls and add a drizzle of olive oil to each. Toss to coat, then season the chives and spring onions with a pinch of salt and a grind of pepper and toss again.
To make the dressing, whisk or blend the lemon zest, 1/4 cup of parmesan, and garlic with a heavy drizzle of olive oil. Salt and pepper to taste. Set aside.
Carefully remove your pizza stone or baking sheet from the oven. Flour the pizza stone or oil the baking sheet. Place the dough on the stone or sheet.
Scatter on the spring onions, chives, prosciutto, and remaining parmesan over the pizza. Drizzle dressing over the top.
Transfer the pizza to the oven and bake until the crust is golden about 8 minutes.
Remove the pizza from the oven. Hit it with a squeeze of lemon. Slice and serve.
