Moroccan Chicken with Preserved Lemons & Olives and Couscous with Raisins & Almonds

Ingredients for the Moroccan Chicken with Preserved Lemons and Olives:

  • 1 whole chicken, cut into pieces
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon ginger powder
  • 1 teaspoon turmeric powder
  • ½ teaspoon cumin powder
  • 1 cup Mina pitted green olives
  • ¼ Mina preserved lemon, sliced or cut into pieces
  • Pinch of saffron (optional)
  • 2 tablespoons of Mina extra virgin olive oil
  • 1 cup of water
  • Salt to taste
  • Pepper to taste

    Ingredients for the Couscous with Raisins & Almonds:

    • 1 cup water, boiled
    • 1 cup couscous
    • ½ cup golden raisins
    • ¼ cup sliced almonds, toasted
    • 2 tablespoons Mina extra virgin olive oil
    • Salt to taste
    • Peper to taste
