Grilled Chicken Tacos

Ingredients for Chicken:

  • 1 pound of boneless, skinless chicken breast
  • 1 tablespoon avocado oil
  • 1 tablespoon fajita seasoning
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 1 lime
  • 10 corn tortillas
  • 1 tablespoon crumbled Cotija cheese

Ingredients for Mango Salsa:

  • 1 mango
  • 1 avocado
  • ¼ cup diced red onion
  • ¼ cup diced red bell pepper
  • 3 tablespoon chopped cilantro
  • 1 tablespoon salsa seasoning mix
  • 1 lime
  • ½ teaspoon salt

Procedure:

  1. Start by marinating your chicken breast with avocado oil, fajita seasoning, salt, garlic powder and a squeeze of lime juice.
  2. You can cook your chicken on a grill pan, or out on the grill.
  3. Let the chicken breast rest under foil for 5 minutes before slicing into strips.
  4. Combine diced red onion, red bell pepper, diced mango and avocado in a bowl.
  5. Season with fresh lime juice, salt, cilantro and salsa seasoning mix.
  6. Stir to combine and serve over the grilled chicken!

 

*This recipe is killer with chicken, but would also taste amazing with a white fish or shrimp! If you’re trying to watch carbs, try eating this recipe over a bed of greens instead of tortillas.

*Swap out mango with fresh pineapple for a deliciously juicy variation! Try drizzling in a little honey to the mango salsa for a sweet kick.
