Chicken Souvlaki with Homemade Pita

Serves: 4 - 6
Ingredients for Pitas:
  • 1 cup water, warmed just to the touch
  • 1 teaspoon granulated sugar
  • 1 pack quick-rise or fast-acting active dry yeast
  • 2¼ cups all purpose flour, plus more for dusting
  • 1/2 cup whole wheat flour
  • 1 teaspoon kosher salt
  • 2 tablespoons Greek olive oil
Ingredients for Chicken Souvlaki:
  • 1/4 cup Greek olive oil
  • 1 tablespoon white wine vinegar, or substitute red wine vinegar 
  • 2 tablespoons dried oregano 
  • 1 teaspoon sweet paprika
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon kosher salt
  • 1 lemon, juices
  • 3 garlic cloves, smashed
  • 2 chicken breast, cut into 1 inch pieces
Ingredients for Tzatziki Sauce:
  • 1/2 English cucumber
  • 1 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 3 tablespoons white wine vinegar, or substitute red wine vinegar 
  • 2 - 3 tablespoon Greek olive oil
  • kosher salt, to taste
Special Equipment:
  • pizza stone or cast iron skillet
  • metal skewers or wooden skewers that have been soaked for 30 minutes in water
  1. Preheat the oven to 500°F with a pizza stone or upside down cast iron skillet inside. 
  2. To a small bowl, stir together the warm water and sugar. Sprinkle over the quick-rise yeast and stir just until combined. Let sit for a couple of minutes, until the yeast has started to foam and bubbles appear. 
  3. In a large bowl, stir together the all purpose flour, whole wheat flour, and salt. Make a well in the center and pour in the foaming yeast mixture along with the olive oil. 
  4. Stir everything together until combined and use your hands to begin kneading the dough in the bowl. Turn the dough out onto a lightly floured surface and continue to knead until a smooth ball has formed, about 5 minutes. 
  5. Place the dough back in the bowl covered with a clean towel or plastic wrap and allow to rest for 20 minutes.
  6. Meanwhile, prepare the chicken. To a large zip top bag, add all of the ingredients except the chicken, and shake to combine. Add in the chicken and shake to fully coat. Set aside in the refrigerator to marinate for 10 - 15 minutes. Meanwhile, heat a grill or grill pan to medium high heat.
  7. To make the tzatziki, grate the cucumber. Using a clean kitchen towel, wrap up the grated cucumber and squeeze out the excess liquid over the sink. Add the cucumber to a medium-sized bowl. 
  8. Stir in the Greek yogurt, garlic, and vinegar until combined. Stream in 2 - 3 tablespoons of olive oil depending on your desired consistency. Season with salt to taste and set aside in the refrigerator until ready to serve. 
  9. To form the pita, turn the rested dough out onto a lightly floured surface and divide into 8 equal pieces. Working with one dough ball at a time, and keeping the remaining covered with a clean kitchen towel, roll the dough out into a 6 inch circle, about 1/4 inch thick. Be sure to not roll the dough too thin as you want to give the steam room to expand while cooking. Repeat with all the remaining pieces of dough, being sure to keep them covered as your work. 
  10. To cook the pita, very carefully place one of the rolled out dough rounds onto the heated pizza stone or cast iron and quickly shut the oven door. Turn on the oven light so that you can watch the process. Allow the pita to cook for 1 - 2 minutes. It should begin to rise and puff up as the steam expands in the center of the dough. About 30 seconds after it has fully puffed, use a spatula to carefully remove the pita from the oven to a plate lined with a clean kitchen towel and cover. There will be hot steam still in the center of the pita so be careful when transferring. 
  11. Repeat with the remaining dough, stacking the pitas on top of each other as they come out of the oven. It is okay if the pita feels a little stiff coming out of the oven initially, staking them will also help to soften the cooked pita. Keep covered until ready to serve. 
  12. Remove the chicken from the refrigerator and thread 5 - 6 pieces of chicken onto each skewer. 
  13. Place the chicken skewers onto the preheated grill or grill pan and cook for 5 - 7 minutes per side, or until cooked through. 
  14. Serve the chicken souvlaki with the freshly made pita and tzatziki sauce.
