Boys & Girls Club Dinner Party

Ingredients for Chicken Wings:

  • 3 pounds chicken wings
  • 1 tablespoon baking powder
  • salt and black pepper, to taste
  • ⅓ cup hot sauce, such as Frank’s Red Hot
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon garlic powder

Ingredients for Cheeseburgers:

  • 1 pound ground beef chuck (20 percent fat)
  • 4 teaspoons softened butter
  • 4 hamburger buns, split
  • Coarse salt and ground pepper
  • 4 slices American or mild cheddar cheese
  • Toppings: shredded iceberg lettuce, pickle chips, thinly sliced red onion, mustard, ketchup, and mayonnaise

Ingredients for Chocolate Chip Skillet Cookie:

  • 1 cup unsalted butter
  • 1 cup light brown Sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups + 2 tablespoons all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup milk chocolate chunks
  • 3/4 cup semi-sweet chocolate chips
  • Vanilla Bean ice cream

     Procedure for Chicken Wings:

    1. Preheat your oven broiler on low, and place an oven rack 4 to 6 inches below it.  
    2. To prepare the wings, first lay them out on a baking sheet and pat them dry.  
    3. In a large mixing bowl, combine the baking powder with 1 tablespoon of kosher salt. Add the dry wings and toss them until they are evenly coated.  Line your baking sheet with aluminum foil and place the wings on the sheet in an even layer - ensuring there is a bit of air space between each one.  
    4. Place the baking sheet of wings underneath the broiler until golden brown in color and very crisp on the top, 10-15 minutes.  Flip them all over to broil the bottom side for another 10-15 minutes.  
    5. While the wings are under the broiler, prepare the buffalo wing sauce by stirring together the melted butter, lemon juice, garlic powder and hot sauce in a large bowl.  Adjust the seasoning to taste with a pinch of salt and black pepper.  Remove a small amount of the buffalo sauce to a small bowl for serving. 
    6. Once fully cooked and crispy, add the chicken wings to the bowl of remaining hot sauce and toss until fully coated. Transfer the coated wings back to the sheet pan, leaving as much sauce in the bowl as possible, and broil for another 5 minutes until some spots on the sauce have bubbled and darkened.  
    7. Remove the wings from the broiler and serve with extra buffalo sauce.

    Procedure for Cheeseburgers:

    1. Divide the beef into four equal pieces and shape into a compact ball. Press the ball into a thin disk, about ¼ inch thick, making the center a bit thinner and the edges a bit thicker. Season both sides of the patty with salt and pepper. 
    2. Brush the inside of each hamburger bun with melted butter then place them in a large cast iron skillet over medium heat, butter side down, and toast until golden brown. Set them aside once they’re toasted and repeat with any remaining buns.
    3. Heat the same skillet over high heat and cook burgers in batches, 2 minutes per side, until all burgers are cooked. If you’d like, top burgers with a slice of cheese after the first flip, allowing it to melt for the second 2 minutes of cooking. 
    4. Transfer your cooked burgers to the toasted buns, and serve with your favorite toppings and condiments.

    Procedure for Chocolate Chip Skillet Cookie:

    1. Preheat your oven to 325F. 
    2. Place a 10-12” cast iron skillet over medium heat and melt the butter.  Once melted, turn the heat down to low and add both the sugar and brown sugar. Stir the mixture well until it becomes smooth and shiny. 
    3. Let the butter and sugar mixture cool for about 10 minutes (you can place it in the refrigerator to speed this up). Once cool, add in the eggs and vanilla and stir until fully incorporated. 
    4. In a separate bowl combine the flour, baking soda and salt, stirring until evenly combined and then add the flour mixture to the skillet and mix until everything is combined evenly. 
    5. Fold in the chocolate chips, ensuring they are evenly distributed.
    6. Place the skillet in the oven and bake for 25 - 30 minutes, until the edges are golden brown and the center and top are just beginning to set. It’s ok that they are still a bit soft, the cookie will continue to cook as it cools out of the oven.  
    7. Place on a cooling rack and allow to cool for at least ten minutes before serving. Serve warm, topped with ice cream.
